Baked sweet potato - what toppings?

I'm thinking that baked beans won't work because they are too sweet with sweet potato.

Needs to be relatively healthy toppings please (i.e no fistfuls of hard cheese).

Smoked mackerel pate is my favourite with baked sweet pots.
I make my own, with smoked mackerel, greek yog, horseradish sauce and chives, blitzed in the mini chopper, but just mashed together would be fine.

How long do I bake it for? Is it the same as normal potatoes?

You can just do them in the microwave - it makes no odds as the skins don't crisp like on normal potatoes.

they don't need as long as normal baking potatoes. Just over half the time I have found.

Their skins do crisp a bit - they're quite different cooked in the oven than the microwave :)

Feta or Philly and pepper makes great mash with them so cheesy sauce or pepper sauce or even (I know, I'm a genius Grin) cheesy pepper sauce.

Mix a good dollop of creme fraiche with some marmite. Not exactly fine dining, but it tastes bloody good!
