Bacon leek and mushroom quiche, with new pots. Done. Except it takes ages to make quiche.

Sweat the leeks & mushrooms, add the fried bacon & make some sort of sauce (cream/white wine?) and then boiled new pots :)

I'd do an egg thing, but we had a spanish omelette/fritatta type concoction just a couple of nights ago!!! I have no pastry but otherwise a flan/quiche would have been spot on.

So, how about fried bacon with some sort of leek/mushroom combo (yes, I do have creme fraiche), roasted halved/quartered new potatoes on the side???

I would boil and slice the new pots, fry the leek, bacon and musrooms, put all into a bowl and make a cheese sauce to pour over. Grated cheese on top, into the oven. Gratin. Yum.

Ooo, tethers you are talking my language, does that go all in together, would you mix the sliced spuds in to the rest of the mixture or do a layer on the top?

I'd mix it all in together or dot the other stuff between layers of potato IYSWIM and then pour over the sauce. I'd make sure there were some potatoes on top to go nice and crispy.
