I love ginger but this is a huge quantity!

Can I freeze it?

Can I make it into something? cake related

freeze it, you can grate it from frozen.

I know the feeling - once had 1kg of ginger Shock. I mean. 1 KG!!!!!!! I would be scanning on-line recipe sites for anything cake related that used ginger as well ... any excuse for cake Grin.

I had a quick google for recipes and they all call for 2tbsp or something, nowhere near the quantities I have!

I always buy ginger in bulk, I peel the lot, shove it in the food processor, then freeze it in ice cube trays and then decant into resealable freezer bags. Saves a lot of time and effort in the long run.
