Good (gluten free) chocolate cake recipe

My boyfriend is coeliac and there aren't many cakey things we'll both eat as I'm not a huge fan of the texture of many gluten free things! But an adaptation on this chocolate brownie recipe makes a really good chocolate cake:

If you halve the sugar content (so 100g instead of 200g) and use half and half gluten free flour and ground almonds you get a really nice, moist, light chocolate cake Grin You would never guess it was gluten free! And it's (marginally) healthier than the original brownie version of the recipe.......

Looking at the recipe again I've just noticed that when I made it on Monday night I only used 100g of chocolate instead of the 150g - oops! And it was still really good Smile

The shortbread recipe on the Dove farm site is really good too.

Ooh, try the hairy bikers chocolate hazelnut cake that was on tv on Monday- Italian, no flour at all, nutella in top, absolutely yum.

Gluten Free Chocolate Cake :)

150gm dark chocolate ( 70% solids)
110gm margarine or butter
125gm unrefined golden caster sugar
4 eggs, separated
50gm Doves plain gluten free flour
1tsp gluten free baking powder
1tsp vanilla essence

  1. preheat the oven to 180deg C. Grease and line an 8in loose bottom tin.

  2. put the chocolate and butter in a bowl over a saucepan of boilin water and melt, stirring until they have combined. Then add the sugar and stir.

  3. remove from the heat and add the egg yolks, flour,baking powder and vanilla essence. Stir until mixed thoroughly.

  4. beat the egg whites until stiff. Fold gradually into the mixture. Pour the mixture into the cake tin.

  5. bake for 50mins. Leave to cool for five mins or so before turning out on a cooling rack.

Serve warm or cold with red berries and cream, a fudge sauce or a chocolate (White or dark) and double cream ganache.

This recipe for chocolate cake is gluten free and fat free, the veg content gives it a lovely texture and because it doesn't contain butter it will keep fresher:

3 medium eggs
160g unrefined caster sugar
200g butternut squash
2 tbsp strong coffee (optional) or hot water
120g Doves gluten free flour
50g ground almonds
40g cocoa powder
2 tsp baking powder

Oven temp Gas 4 or 180C. Whisk eggs and sugar together about 5 mins, then fold in squash, followed by the rest of the ingredients. Use two 18cm loose bottomed tins, buttered. Bake for about 25 mins. Combine with whatever filling you prefer. I'm a big fan of vegetables in cakes www.vegboxmonologues.co.uk
