I have been trying out recipes from a low fat chicken book (from Aldi) with varying success.

Tonight we had Tandoori CHicken, made marinade this morning (very easy), and cooked for 25 mins tonight. It was lovely and WHOLE family gave it the thumbs up

Sorry for delay

4 chicken quarters (I used large legs), skinned & scored through the flesh.

Mix together:
6fl oz Low fat Natural yoghurt
1 tsp Garam Masala
1 tsp grated fresh root ginger
1 clove garlic - crushed
1.5 tsp chilli powder
.25 tsp ground tumeric
1 tsp ground coriander
1 tbsp lemon juice (I didn't have any so used orange!)
1 tsp salt
few drops red food colouring (mine looked flourescent - but was fine when cooked!)
2 tbsp corn oil (I forgot this, less fat! it still tasted fine)

Put mix all over chicken in shallow dish (I used a roasting tin) & leave for 3 hours (all day).

Cook in preheated oven at 240 degrees C for 25 mins, until cooked through & browned on top.

We served with salad, pilau rice & Nan breads.

Enjoy
