Advice needed! Saint Hugh's chilli, cheese and rosemary polenta has not worked.

We tried the polenta and tomato sauce tonight for dinner and it didn't really work! The mixture was yummy but it all melted in the pan and did not achieve the 'light golden brown crust' indicated in the recipe but was instead a pile of very tasty polenta mush.

Has this happened to anyone else? Can anyone advise on what I could do next time as it was very yummy but could probably have better (and a little more attractive to look at!).

Did you give it time to get properly cold after you'd boiled it?
Did you have the pan very hot? (a lot of liquid came out when I did it so it worked best with the pan very hot to boil the liquid off)
Did you fiddle with it before you could see the edges start to brown? I found that it broke very easily but you could just about see the edges brown so you could tell when to turn it over without lifting it up (and risking breaking it) to check.
