I need a recipe with chicken that can be cooked in advance and yet still seem quite snazzy...

This easter weekend is a non-stop series of people coming round.

I have already made two quiches (one bacon, one caramelised onion), a chocolate cake, 36 fairy cakes and am pkanning a grilled pepper starter thingy.

But just discovered I have more people coming on Monday.

I need a recioe I can make tonight and refrigerate or freeze until Easter Monday evening.

Chicken is ok
No meat

Ideas most welcome!

Anything with sauce will be fine as the chicken won't dry out when you reheat it. Maybe a chicken curry then you can just cook some rice and naans to go with it.

A biryani would be good if you have fridge space.

Or sweet and sour chicken will keep in the freezer well.
