HELP - nigella's grasshopper pie has curdled...TWICE!

I'm really fed up, I'm tired and my feet hurt! I'm making nigella's grasshopper pie from Kitchen and the green mixture has curdled twice! I've made it a few times before and it was fine - what am I doing wrong this time?

I've been to the shops and bought the ingredients for the third time and I really don't want it to go wrong again. Has this happened to anyone else? Does anybody know why it is happening?

Our local co-op now has no marshmallows left so this the last try! Any advice gratefully received!

Is everything at room temp?

I've just googled the recipe. Does it curdle at the heating milk with marshmallows stage, or when adding the alcohol?

Could it be a different brand of marshmallows with slightly different ingredients, or something like that? Someone had commented on the recipe that it had curdled, too, so it's not just you.

With some things like egg custards, you can add a tsp of cornflour, and that stops it splitting and turning into scrambled egg when it's heated. However, I think it might the alcohol. Not sure that creme de menthe wouldn't make either milk or creme curdle.

Perhaps try a little test with the milk/cream and a little liqueur and see if it curdles. Can't think of anything else. If it were orange-based would suggest it was that.

Good luck
