what can I do with a lot of parsley?

Hi, a colleague has given me a large bunch of parsley from his allotment, any ideas for recipes?

makes a nice substitute for basil in pesto and will keep in the fridge for a bit if covered with oil

Even a pretty strong parsley sauce doesn't use very much though, maybe chop it and freeze it? You could spread it out reasonably thinly on a plastic tray until it's frozen (to stop it all clumping together), and then put it in a plastic bag.

I bought some frozen chopped coriander recently in desperation as I couldn't get fresh, but it's brilliant - DP hates it so I rarely buy it and never use the whole bunch when I do. This way, I can make my carrot soup and have coriander in mine, but not in his.

tabouleh for sure or you could make a few loaves of bread made with chopped parsley+ chopped onion+ sliced olives+ grated carrot with olive oil....tastes lovely and healthy for family.
