URGENT HELP needed from cake bakers (wedding cakes in particular)

I need a chocolate cake for a wedding in one week's time. I have a recipe from a friend which she said keeps really, really well (no butter, veg oil). I made it today, if and crumb coat it and fondant ice it tomorrow do you think it will keep until Friday (reasons for making it early are long, boring and complicated but basically, days I have to get it done are today, tomorrow or Sun afternoon), no other time. Friend has gone MIA so I can't ask her. Am having a massive wibble here. Shall I put it in the freezer and defrost/ice on Sunday?

I am not a big fan of defrosting and icing. I recommend making a long lasting cake, like a madeira base (chocolate can be added) as these have the shelf life.

Thanks! I have spoken to friend and she reckoned if it was covered soon it would be ok so I have crumb coated it tonight and I will cover tomorrow. Phew! Smile
