Secret ingredient to turn back-of-the-fridge soup into WOW soup?

I have loads of veg to use up because we're away this weekend and most of next week so am going to do a big ole soup and serve with bread and cheese-ends tonight. What can I add to make it extra tasty and not feel like a 'using things up' meal? I was thinking about a can of coconut milk and a dollop of Thai red curry paste before whizzing?

I usually resort to a dollop of curry paste to liven up soup so I like the sound of Thai curry paste and coconut milk myself.

dustyhousewithdustypeople · 15/03/2012 18:12

Fresh herbs? That always helps.

Smoked paprika is magic stuff, also black onion seeds. I think coconut milk and curry pasta will be lovely, but would cook the curry paste a bit rather than dollop it in at the end.

This [[http://www.bbcgoodfood.com/recipes/5898/speedy-sweet-potato-soup-with-coconut recipe has coconut milk and curry paste and is lovely, although didn't bother with grating the sweet potato.

Crushed cumin seeds are good. DH just adds hot pepper sauce to every soup I make (just his bowl, he doesn't ruin the whole pan).

Might be too late, but Marigold Boullion Powder is amazing, it transforms soups

supernannyisace · 16/03/2012 17:21

Chillis or some smoked paprika - as already suggested.

I rate the Marigold Bouillon too,.

Make a lot of soups here, often using up the old veggies.

Enjoy1!

I often put some turmeric and cumin in, with a bit of chilli for some heat.

Fraktal · 16/03/2012 17:27

Ginger and a splash of soy sauce. Fab with carrot based soups.

googietheegg · 16/03/2012 17:37

Deffo stock/marigold instead of just water. Red Thai curry paste and coconut milk works v well with sweet potatoes, red peppers, carrots and onions in a soup.

shoppingbagsundereyes · 16/03/2012 18:46

sweet smoked paprika turns any root veg soup or tomato/pepper based soup into a delicious smoky yumminess
