Taragon sauce recipie anyone?

For a quick one I do
can chopped tomato, crushed clove garlic and diced onion and then a large handful of chopped tarragon - adjust according to taste!

I put the chicken in oven proof dish, pour over sauce and bake for 20 mins

serve with rice

(or can simmer in pan)

I do chicken and tarragon with single cream and white wine.

Just fry the chicken, then take of heat once it is thoroughly cooked, throw in a good glass of chilled white wine to cool the pan followed by tarragon and finally a small tub of single cream. Add a bit more wine or water if the sauce is too thick. I add black pepper and salt too to taste. Warm the pan up gently if the sauce is too cold.

Sometimes I do a version with white grapes sliced in half added in too (Chicken Veronique).

I serve it with white rice boiled and a green veg.

That recipe is for 2 chicken breasts. So double for 4 chicken breasts and so on.

I do same recipe as MoreBeta, sometimes using creme fraiche instead, and stock instead of white wine if we don't have any. It is lovely!
