Can anyone recommend a recipe for a fruit cake for my DD's Christening?

Everytime I've made fruit cake before the fruit has all sunk, the middle stayed soggy, basically the 2 recipes I have don't work and I can't risk another mess up!

I have a recipe that I have used for my Christmas cake for the last 5 years and it has worked perfectly every time. It's from a book that my DM bought in a charity shop. PM me your address and I'll photocopy the pages and post them to you. It gives quantities for different sizes cake tins so is great for making tiered cakes - should you ever feel the need. Smile

There is a good one on the Kenwood website - I do it often and it's lovely.
There are measurements different sized cakes.

BBC good food is always a winner as you can read the feedback so you know that its fail safe.

Delias christmas cake is a hit with many but you may want a lighter one - look for a wedding cake recipe.
