flapjacks and other 'healthy' cakes please

I'm a good cook but a real novice at baking. want to start doing some baking with the kids and increase my repetoire beyond butterfly buns.

Anyone got any foolproof recipes for healthy-ish cakes - am thinking ones with fruit in (ds has irrational hatred of raisins though). Would love to make things that ds can have in his lunchbox.

Finally - the last flapjacks I made were like volcanic matter - does anyone have a good recipe?

Muffins? Susan Reimer's book, Muffins Fast & Fantastic is pretty good. I tend to make them for the kids' lunchboxes - carrot, bran, pear, you name it - they don't notice and they're fast to make & tasty. I just do a batch of mini sized and pop them in the freezer then take them out as I need them.
