Please tell me how to make a good casserole with these ingredients..

A large bit of cooked pork joint leftover from a late Sunday dinner on Monday night! Plus the following

carrots
Chorizo sausages
tomatoes and tinned tomatoes
onions

Will this make a good casserole? How do I do it (haven't a clue!) - worried that the pork will be rock hard as it looks now.

My family eat anything with chorizo in it! Just fry off onions and carrots, add tomatoes and chopped up carrots. Simmer for 10 mins to cook carrots, then chuck in cooked pork. Serve with mash or rice.
