A bag of carrots and a bag of greens

I have quite a lot of carrots and greens in the fridge. Got a few more days in them at best and with the best will in the world, there is no prospect of me and the 2 DC getting through them.

Anything I can do with them to freeze and reuse? If I blanche will it work? Turn into some sort of dish? Seems such a shame for them to go to waste.

Yes, I did wonder about soup, that might be it. I've just got pints and pints of various soups already in the freezer so wondered if I could find something else!

How about these carrot and coriander fritters from Nigel Slater? They look nice. You could do those with some tzatziki on the side for lunch, then use the greens in a stir fry with soy sauce and noodles with a bit of chicken or cashew nuts chucked in, in the evening. Sorted! Grin
