Not sure if this is quite the thing for this board but this recipe is such fun and so nice I wanted to share. A sort of deconstructed gateau if such things are allowed.

For 4 people or so with a couple of small portions each you need:
Approx 2/3rds of a pint of double cream, whipped
Tin of black cherries in syrup, stoned by halving, syrup reserved
Big pack of maryland double choc cookies
Dark chocolate, maybe an ounce?

Start this the night before you want to eat it. It doesn't take long to do, but it needs to soak. In your attractive trifle dish (I use the one I make my fish pies in, a bit like a souffle dish about 20cm in diameter), spread a small amount of the whipped cream to wet the bottom. Dip cookies briefly in cherry syrup before arranging in a single layer upon cream, breaking up dunked biscuits to do some jigsawing if you so wish. Arrange a layer of cherry halves upon the damp biscuits. Add a proper layer of cream, biscuits, cherries until your bowl is almost full (or you run out of bics/cherries). Finish with a layer of cream, and a sprinkling of grated or blitzed dark chocolate.

Quantities will depend upon the size of your dish. Think this was an Australian Womans Weekly recipe - my MIL brought it back from a visit to relatives. if left for a few hours, the cookies dissolve into a damp spongy layer with chunks of choc. If I was not trying to also feed the kids feeling feisty I might add some kirsch or similar to the cherry syrup for dunking.
