roast sausages, parsnips and onions - so simple! so yum!

It was in the guardian last saturday. parsnips, onions, sausages, bit of olive oil, butter. thyme if you've got it (though I didn't) and parsley if you've got it used some dried parsley

onions and parsnips in a roasting tin dribble olive oil over. Cover with foil, 30 mins (200C).

Add the sausages, dot the butter (and thyme), 20 mins.

rest for 5-10 mins, scatter chopped parsley.

absolutely lovely!

It's quite sweet - caremalised onion, parsnip - so I think sweet potato would make it too sweet.
