I've lost my motivation to cook so I'm grabbing high carb, easy meals. I need to eat more healthily don't I?

DP eats loads of salads but it's still too cold for me to do that too.

What do you eat when you're short on time and energy?

Baked potatoes with various fillings, zero effort.

Pasta/pesto (can chop a tomato or shove frozen peas in if desperate Grin)
Pasta/tuna + whatever salad veg/frozen veg is around
Jacket potato in the microwave + ditto + cheese

DP is also really keen on salad, whereas I crave proper food something hot so I tend to compromise by shoving salad veg into something warm.

Roast up a load of veggies, eat with couscous over the next few days

Eggs/omelettes add meat of some kind and veg like beans or spinach when you fry up. Add cheese for added delight/goodness.

I used to cook boil in the bag brown rice the night before, then mix it with a tin or carton of soup, frozen sweetcorn & some kind of protein eg ham/chicken and zap it in the microwave for my lunch at work.

bless you it is tough isn't it? In my 1st trimester I couldn't plan cooking at all - I couldn't contemplate the stuff - so when I got hungry I needed instant gratification, most usually in the form of Pizza Hut

I would recommend a big fruit smoothie - you could bulk it out with a few porridge oats if you wanted - banana and strawberry with milk/yog and honey is lovely for breakfast

pasta is dead easy and goes with everything - you can bung some broccoli or other veg in the water at the same time

if you can't handle cooking, there are some actually quite healthy ready meals on sale these days with fresh veg etc - not cheap but better than pizza hut!

cheesy peas. so wrong yet sooo good :)

Thanks y'all.

Right, I'm going shopping later so I'll get some fruit and veg, pasta, eggs and potatoes. even though, I don't really fancy fruit and veg Hmm I need to grow up!

Just had birdseye burger sandwich for lunch. That's a bit crap isn't it?

Homemade soup?

juneau · 29/02/2012 13:37

Stir fry - you can buy all the veggies pre-prepped in a bag in any supermarket and packets of sauce and noodles are usually nearby.

Salad with cottage cheese/tuna/ham/cheese cubes/any protein you like. Throw in some sweetcorn for carbs or have a chunk of wholemeal bread on the side.

Homemade soup is really easy and can last all week of you make a big pot.

And yes, jacket potatoes with beans/cheese/tuna mayo/prawns/etc.
