Me and my work colleagues have had to do some mandatory admin type training within a specified time frame. Of course it's at the bottom of everyone's to do list so I promised cake if I got 80% compliance a week before the deadline. They seem to be taking it seriously now so I've got to come up with the good!

I want to make a moist dark chocolate cake with white chocolate icing. I could google for recipes & have Nigella's Feast but I want RL recommendations.

For the icing would I just add melted white chocolate to normal butter icing?

Yes you can just add white chocolate to butter cream - I've just done it today for DDs birthday cake. :)

I've always found it tricky to melt though - todays christmas milky way buttons got as far as a butter like paste but that was good enough.

From Feast, the chocolate gingerbread is utterly divine.

Thanks Soupy. Would the chocolate gingerbread be a bit weird with the butter icing?

White chocolate icing:

160g white chocolate
110g soft unsalted butter
½ cup plus 1 tablespoon sour cream
200g icing sugar, sifted

Melt the chocolate and butter in the microwave or in a double boiler, and after it?s cooled a little, stir in the sour cream. Gradually beat in the sifted confectioners? sugar. And if the consistency isn?t right for icing, add either hot water to thin or more sifted sugar to thicken. Spread.

This is the most moist and v dark rich chocolate cake I've ever made. Not sure how it would work with such a sweet icing as white choc would give. It might set it off nicely?

This is the best chocolate cake I have ever had, fudgey and gooey and works really well with white choclate icing. www.bbcgoodfood.com/recipes/3092/ultimate-chocolate-cake

Hmmm... I've made the chocolate gingerbread with ginger buttercream rather than white chocolate.

It bears mentioning that the cake of utterly divine though, given you have the book :o
