Aaargggghhhh!!!! Urgent!! Dinner party crisis!!!

I have 12 for dinner tomorrow and I have cooked Delia's tuscan bean soup as a starter. It's DISGUSTING! I think my mistake was I used the same weight in drained tinned cannellini beans as she said in dried weight. How can I redeem the soup? Can I just heat more beans in it tomorrow and then blitz again? If so, any ideas on the ratio of canned to dried in weight? If not, recipes for a fast but impressive starter for 12 urgently needed! TIA

What's your main course?

Hulababy · 27/01/2006 19:10

Not tried the beans, but if similar to when using herbs - you need much less dried than fresh, as the dried flavour is more intense.

buy some covent garden soup! it's lovely and no-one will know you didn't make it yourself

Hulababy · 27/01/2006 19:13

Yes, you could just cheat, or at least buy an alternative in, incase oyour rescue attempt doesn't work. Drissle some fresh cream and sprinkle some freshherbs on the bought one and it will look lovely and more homemade!

fannylover · 27/01/2006 19:14

or, if you really wanna do homemade and can get to shop....
smoked salmon and cream cheese parcels?

alexsmum · 27/01/2006 19:15

melon and parma ham? no cooking at all?

robinpud · 27/01/2006 21:07

don't bother with starter and do really nice cheese board instead.

LOOBYLOU2 · 27/01/2006 22:06

try adding some chorizo sausage to it
It should spice it up and add some colour
(I know it's Spanish and not Italian but ....)

lucy5 · 27/01/2006 22:09

Try adding creme fraiche!

moondog · 27/01/2006 22:12

Soup for 12??
Too much faff-the first portion will be cold by the time you've ladelled it out.
Do a lovely salade tiede, maybe frisee walnuts and bacon? Or how about chicory,Roquefort and walnuts??

Plie into a couple of big salad bowls to put in the centre of the table, add warm crusty bread and voila!!

Auntymandy · 27/01/2006 22:14

I think you could add more beans. Seems a shame to waste it if it can be saved

LOOBYLOU2 · 27/01/2006 22:34

dips would be my suggestion for that number
Lightly toast slices of baguette and have big bowls of home made dips
you could still use up the beans ....

Callmemadam · 27/01/2006 22:59

Ok, plan a is add more beans, sample wine
plan b is covent garden soup (sorry Tesco is boycotted in this houseand sample more wine
plan c is the suggestion to skip the starter as I have got some really nice cheese..... WHY is it that I always arrange these things and think they are a good idea and then get to the weekend and think oh god oh god oh god? Have to do this one though, for reasons I won't go into! Thanks everyone for help
