Where on earth do you get veal stock?

I'm making Nigella's bolognese risotto, which calls for veal stock. I couldn't find it anywhere and have used beef stock instead.

Where on earth do you get veal stock? It's not something I would make myself, like chicken or veg. It must be available as she talks about it being an important part of the recipe from a flavour point of view.

Maybe waitrose? Or buy a bone and make your own? But really tend to agree - such a ponce

You get veal bones from the butcher (ask them to cut the bones into smallish pieces), roast them and then make stock in the usual way.

I had a look in Waitrose, but they just have the usual ones (unless I wasn't looking in the right place).

I just thought it must be something which is fairly readily available, as the recipe needs 2L!

Thanks for the tip MoreBeta. I guess I could make it myself if we were having people round or something. Do you think makes much of a difference if I use beef instead?

It is possible that a good butcher would have some ready-made. But I would just use beef.

I don't think it's a bog-standard ingredient. My local Whole Foods doesn't have it so I think you'd have to go uber-poncey (Harrods?).

Mishy - I do use beef stock in risotto as I prefer it with a slightly stronger flavour. Its just a slightly more brown colour though than veal stock will give.

Well, I made it with beef stock (the liquid kind) and it was lovely. It did make a HUGE amount though, so will be making the patties she suggests tonight.

I think next time I might use the Kallo beef stock cubes MrsMagnolia, as it was quite expensive to use the liquid stock. I did find that 2L was way more than I needed though (maybe could have got away with 1.5L in total), so wasted quite a bit.

You can get 'fond de veau' powder in small tins.
