I love soup and make the following on a regular basis:

Creamy Leek and potato
Pea, ham and mint
Cream of onion
Tomato and red pepper
cream of mushroom
cream of onion
sweet potato and red onion
sweet potato, red pepper & chorizo
chicken noodle
honey roasted parsnip
winter veg (leeks, parsnip, carrot, swede, potato etc)

Dont have recipes as such - just always start with a base of white onion and potato, no matter what flavour soup you are doing.
chop your veg etc. roast or fry first if necessary. chuck all in one pan with some veg or chicken stock, salt and pepper. boil until veg is soft. I usually seperate some of the chunky veg and blitz the rest in the blender so I have mainly smooth with the odd chunk.

stir in some cream or full fat milk, and add more water if you want to thin it out.
I usually serve with crusty bread and butter.

I tend to batch make soups in a big pan so there is enough to do me and DH for dinner one night, lunch the next day and then a couple of portions to put in the freezer to have later on.

easy peasy!

mmm im so hungry now...better go and make myself some lunch!

Our favourite is one I nicked from a magazine years ago, called "man soup" but that just sounds rude to me.

1 onion
1 leek
2 sticks celery
1 carrot
1 red chilli
1 sweet potato
75g diced chorizo
800ml chicken stock
1 tin kidney beans
creme fraiche (to serve)

Chop the onion, leek, celery, carrot and chilli and sweat over a low heat for about 10 minutes.
Add chorizo and cook for 4 mins more
Add peeled chopped sweet potato and stock, bring to boil and simmer for 20 minutes
Add half the kidney beans, warm through and whizz up with a blender
Stir in remaining beans and heat through.
Serve with a dollop of creme fraiche.

This will normally do us for supper for two and two smaller lunchtime portions for me.

Two favourites that I make:

Broccoli, lime & wasabi

Sweat a diced onion & some potato. Pour around a pint and a half of veg stock and bring to boil. Add chopped broccoli (including stalk) & simmer until veg tender. Allow to cool and blend until smooth. Warm soup again. Add a dash of lime & wasabi paste. Stir, add more lime or wasabi to taste, but go carefully, you don't want these to be dominant flavours.

Leek, potato, celery & prawns

Sweat chopped onion, potato and around 3 sticks of celery with some crushed green cardamom seeds (5 ish pods) & a bit of celery salt. Add veg stock and some lemon rind and simmer until veg tender. Allow to cool a little & pick out the lemon rind. Blend until smooth (you may want to sieve out the celery stringy bits, but I rarely bother). Add some cream or milk & warm gently. Add fully defrosted cooked prawns at last moment and allow to heat, but not cook.

My 4 yr old & 17 month old adore this one. Hope you do.
