simple one is mint and yoghurt

  • either mix mint sauce and plain yoghurt

or

if you want more flavours, crush a clove of garlic in a mortar and pestle (or the end of a rolling pin if you don't have one! Grin
and finely chop a green chilli and mix with the mint and yoghurt.

If you have some fresh green coriander - finely chop/crush and mix in or blitz the lot in a blender!
Add salt to taste.

I could literally drink that shit, love it.

It's more watery than yoghurt though and sometimes it's yellow, I've even had it slightly blue before. Must have been out of green colouring!

if you want it thinner just add some milk, personally I like it quite thick - sort of ketchup consistency but then we also like ketchup with pakoras/samosas!
