Has anyone got a truly exquisite salad and dressing recipe ?

I never liked salads much, but since I had a gastric bypass and have changed how I eat, I have started to love them. I love bought ones, but never ones I make myself.

Any ideas ? I love the dressings, couldn't eat one without.

Try buying a selection of oils (olive, walnut, grapeseed) and vinegars (balsamic, shallot, raspberry and whatever else you fancy).

Also have two types of mustard - I personally prefer French mustards.

My base for salad dressings is:

3 parts any one oil to one part vinegar or lemon juice.

To that I may add any one or some of the following:

  • mustard to taste
  • a splash of tabasco sauce
  • some grated fresh garlic
  • finely chopped shallots
  • finely chopped chives

Salt and pepper to taste and even with those few ingredients you can have a different salad dressing for every day in a month :)

Preparing it in a jam jar and giving it a good shake works. Also, preparing it in advance and giving time for the flavours to come out before re-shaking and adding to salad.

There are loads and loads of different things you can add to make your dressing different.

My favourite though is olive oil with shallot vinegar, salt and pepper and a small pinch of sugar.

Good with raw carrot/cabbage/rocket type salad stuff
