Stocking the freezer before birth of DC2

I really want to better prepared this time round, with a freezer full of delicious food to eat once DC2 arrives. We had an expensive few weeks living off M&S ready meals after the birth of DC1. We're now living overseas, so that won't be an option this time.

DC2 will be born in the summer. We live in a hot country, so won't really feel like heavy casseroles, soups etc. Would love some ideas for meals that I can freeze in advance. I plan to have lots of salads / cold meats / cheeses for lunches but would like slightly more substantial evening meals. Some ideas I've had already: bolognese sauce; veg chilli; veg tagine; chickpea curry; quiche; some marinated chicken breasts.

cassoulet freezes well
this saffron chicken thing is good too, although i think he's a bit mean with the spices - add more paprika and cumin.

Lasagne - complete meal or you can add some token salad, freezes and microwaves well
Pies eg chicken - can have hot or cold, could do with filo to make lighter

Same question from me here though I will be in Blighty, so stews welcome! So far got chilli, some soups, coq au vin and bolognese...DS1 is anti-cheese so lasagne's out. Any other ideas?

How about something like lamb kebabs, great to freeze and can be thrown in some pitta with salad.

Fish pie, with salmon, smoked haddock, cod, prawns, béchamel sauce, broccoli, peas and mash - healthy and all your food groups covered. Jamie olivers prawn and pea risotto, lovely served with salad and crusty bread.

Thanks for all the ideas so far!

The saffron chicken thing, lasagna, pies, lamb kebabs and fish pie all sound good. Would you freeze the fish pie already cooked and then just reheat? I had never considered freezing rissoto before - will give it a go!

Yes to freezing fishpie already cooked, I do and it tastes good. Defrost risotto and then stir through some parmesan to make it glossy again.

Yes and if you can get them, I often freeze in tin foil trays (bought off ebay) that you get with takeaway, then you can just chuck in the oven and less washing up.
Never thought of freezing risotto ...
