Homemade coleslaw (but with shopbought mayo): How long in fridge?

Title says it all really. I made coleslaw today, but with bought (pasteurised) mayo. I hope to get through the vat over the next few days (DS1 asked to have some in his lunch!), but how long will it keep in the fridge? I think the mayo is good for three months or something in the fridge, so that won't be a problem ...

I find it goes a bit slimy after three or four days, so get munching! Texture not microbes the issue I think

No no, it's purple cabbage. DH was very puzzled ... lots of "but where is the carrot?" "is there celery in here?"

Felt like adding, DS1 has gone mad for this stuff. He had a tablespoon, maybe, the first night it was served. Two tablespoons in his lunch the next day (asked for it to be added), then two more tablespoons with dinner that night, and then two more tablespoons in the next day's lunch. I will be making coleslaw again!

I think we're always a bit windy. I haven't noticed any difference from the coleslaw. But then, I never notice any difference from anything that's meant to be windy. Either we're all always windy, or really oblivious. Or both.

homemade coleslaw is lovely. What did u use? Parnsip in it is nice. I prefer to leave onion out of homemade, and if you do add it, you have to chuck it after two days.

Onion, red cabbage, carrot, celery, mayo, parsley.

I've not tried parsnip. But I tend to use root veg to make interesting latkes.

Why does onion make a difference for chucking it? I made it on Monday, and had some after tea yesterday, and it was still fine.

latkes, are you jewish then? I've never actually tried them but they look nice, I might give that a go. Are they normally eaten as a snack or with soemthign else?

I was always taught onion doesn't keep. When makign indian chutneys or raita we don't make large amounts if it contains onion.

Oh, weird, about the onion. I make ratatouille with onion, and it keeps fine in the fridge for a week. The onion's pretty cooked in that.

No, not Jewish, just Canadian. Latkes are more common over there. I normally have them plain, with some greek yogurt, or sour cream.

Normally, they're made with potatoes, but I keep getting strange root veg in my veg box, so I make them with that. Well, I did it once, and will probably do it again today, with a giant celeriac, and some sweet potatoes.

ive never eaten celeriac. I think I'm going to try potato ones to start with and then experiment. Looks nice, think might have to spice it up a bit for dp tho.

Oh, yeah, they're pretty unspicy. It's classic Russian steppes food. (grated root veg, egg, a bit of flour. You want to get all the water out of the root veg - squeeze it in a muslin after you grate it. Then fry in oil.)

They would totally be nice with a spicy topping, or chutney, or whatever.

I would leave the skins on the potatoes, for a more interesting texture and taste, too.

guess what I eating?

I made them with potato, onion, flour, egg, mint, cumin, salt pepper and chives (improvised a bit!). Prob nothing like trad ones but they bloody lovely! They are bland, so I sprinkled chilli powder on top and I'm eatign them with sour cream. DS loves it too.

I will have to think of soemthign spicy to put on top. Ive only got mango or garlic chutney in, but I think I might try a nice raita with lots of green chillis.

Oh, well done! Yes, onion is normal, I forgot to mention that.

They're a lovely way to eat potatoes, I made them last time with celeriac, sweet potatoes, and beetroot, and both DSes went completely mad for them.

Ive been googling since and there are loads of recipes for them! Really cheap and easy meal, we def going be having them more often. thanks for the idea.
