Can anyone give me a vegetable madras recipie please?

It's my favourite from the takeaway, but have only tried making it myself with the jars ready made sauce. Would love to be able to make it properly but honestly wouldn't know where to start!

This is what I do
Fry onion, garlic, peppers til soft
Add Pataks madras curry paste about half a jar, add can chopped tomatoes and can of coconut milk and a little veg stock
Then add cauliflower, potatoes diced and simmer until soft
Right at the end add young leaf spinach

I add whatever veg I have lying around peas are really nice and corgettes but ever add parsnips they go really sweet.
I usually add some chopped red chilies at step one and to serve stir in greek yoghurt.

Hope you like this,, incidentally I have frozen this and it was fine reheated.

Sorry I meant never add parsnip, and I do know the correct spelling of corgette honestly!

Looks good whenstea, similar what I would do, Pataks pastes are good and don't give the same 'jar' taste.

I do similar but more likely to chuck all in a casserole dish (after frying onion & pepper lightly) & put in oven for 30mins.
