Make a cheats pizza. Tom puree or jar of pesto. Tomatoes, mozzarella and salami, ham or chicken.

But, really anything. It's one of my quick n easy standbys.

Salmon en croute - just use skinless salmon fillets, put some creamed horseradish on top, wrap up like a pasty and bake.

Russian fish pie. Chuck a piece of fish in the middle of the pastry, add some veg/herbs and some liquid/white sauce if you fancy, fold over and seal, brush with beaten egg, bake in the oven for ?half an hour, reasonably hot. Lush.

This was a great family favourite when we were kids. My mum used to put ham in as well and it was known as "hammy cheesy stuff", rather than very posh-sounding "cheese d'artois"!

Spread with red onion jam/chutney, some sliced red onion and crumble over goats cheese. A few sprigs of thyme and a drizzle of olive oil. Yummy!

Make palmier biscuits. Unroll, sprinkle liberally with granulated/demarera sugar, press sugar in lightly, start rolling from both ends to make a heart shape meeting in the centre, slice into 0.5cm thickness slices, lay on parchment paper quite far apart, bake at 190degrees until golden brown and crispy.
