My DH says my Moussaka is lovely, but can I make it without the aubergine

He's clearly an idiot, but what could I replace the aubergine with to make something a bit different?

I meant the potatoes, I presume you wouldn't parboil the courgette!

I do but not for long, less than five minutes courgette might be nice too

I make it the "traditional" Cypriot way. Well that is what I have been told. I cook the mince with nutmeg, cinnamon and tomatoes. Then layer the potatoes and put on the white sauce.

Tis yummy and no need for any aubergines. Though I love them.

I parboil the potatoes before putting them on and putting it in the oven to cook that is.

I used a James Martin quick recipe. Used cumin, coriander and mint and it did taste very authentic. No lentils though, that would have beefed it up nicely.

I'm glad you ask this. I wanted to know this as I tried aubergine a few weeks ago, but unfortunly I had an allergic reaction to it.
