I know I'm a bit late, but considering the lack of response, maybe you changed your mind and the chicory's still in your fridge !
You can make braised chicory: cook them whole in butter on very low heat, covered, with a sprinkle of lemon juice, salt and pepper. When they're cooked (stab with a knife) roll each one of them into a slice of ham. Put them in a dish that goes in the oven and spread some gruyere (or cheddar) over them. Add the cooking juice on top and let the cheese melt in the oven. It's yummy !
