Vegetarian food for toddler who doesn't like vegetables or cheese

Is there any?

2 y.o. DS doesn't like any cooked vegetables other than corn on the cob and mushrooms/peppers in risotto.

We're not veggie but we try to eat veggie several times a week. We all eat together. I don't mind him not eating part of the meal, but most of my veggie meals result in him eating nothing except some rice or pasta - or sometimes nothing at all.

pulses! dhal is usually a hit with my picky 3yo. home made beanburgers and wedges, falafel in pitta...

My son is the same
Hummous! My son is addicted.
He also likes my chickpea/spinach coconut curry. Blended -mixed with rice

Try making your own tomato sauce? Then you can insure he gets all the vegetables he needs.
I make mine with onions/garlic/mushrooms/frozen spinach/grated carrot/fresh toms or tinned - Then whiz it all together.
Top Tip (Always pour sauce into the drained pasta rather then the pasta over the sauce - that way the sauce sticks to every bit of the pasta meaning your child will get more of the nutrients!!)
Don't fret though - all 3 of my children began this way and now my eldest 2 love ALL vegetables.

Couscous, just follow packet instructions and stir in whatever veggies he likes.

Eggs in all their forms.

Unfortunately he has a probable nut allergy (we're waiting for blood tests) which is a nuisance as nut butter sandwiches used to be one of our staple lunches.

I'm not going suggest that you buy lots of meat substitute products but my DCs always loved the veggie hot dog sausages. Tesco's now do them, v cheap, in a floppy bag with ten of them in I think.

I used to give one to DD when she was a toddler, straight out of the packet, frozen, wrapping the end in a bit of kitchen roll, and tell her it was sausage ice cream.
She loved it. V good for teething gums too.
