If you had these ingredients, what would you make?

I'm trying to get to the end of the month without going back to the supermarket. We have:

Loads of carrots
Brocolli
Tomatoes
Salad stuff
Green pepper (yuck)
Yellow pepper
Tinned tomatoes
Beans
Tuna
Sweetcorn
Quorn pieces
Quorn mince
Pasta
Usual store cupboard stuff (salt, pepper, mayo, herbs/spices etc)

What would you make? Preferably not Tuna Pasta as we've had that A LOT recently!

Stir fried vegetables (broccoli/peppers/carrots) to go with rice (if you have it)?

Ragu with the quorn mince.

Pasta with garlicky broccoli

Cottage pie made with a carrot mash instead of potato.

Cowboy mince, mince quorn + tinned toms + tinned beans + sweetcorn (if you like) + whatever herbs, spices you fancy. We usually have this as an occasional comforter over oven chips, but I think it would work with rice.

I'm struggling to think of anything interesting to do with the tuna unless you have some cheese, eggs and milk (tuna and cheese stuffed pancakes in rolls covered with drained toms and grated cheese baked in the oven).

Fahitas made with homemade wraps allrecipes.co.uk/recipe/1864/flour-tortilla-wraps.aspx quorn, sweetcorn and the green pepper sliced really fine stirfried with some tom puree or tinned toms drained and mild chilli powder. Plus salad if you want.

That's all I can think of at the mo.

Thank you though, those ideas are great so far. I particularly like the idea of cottage pie with carrot mash instead of potatos. I'm weaning DS at the moment so the carrot mash will be doubly useful!

btw, you can make all sorts of sauces for pasta with those ingredients.
For instance: gently fry onion, garlic, thinly sliced peppers, tuna (add it at the end) and mint.

Tuna salad? You could use the salad stuff, mayo, sweetcorn, tomatoes and peppers for that.

If you have stock cubes, you could make carrot soup - fry onions and garlic, add the carrots and whatever herbs and spices you fancy, add a pint of chicken or veg stock, simmer for 10 mins or so and whizz up till smooth.
