Coconut milk to make a coconut cake

I have a real hankering for coconut cake and I have about a third of a tin of coconut milk left over from a curry. I also want to make chocolate icing. Can I add the coconut milk to the cake or icing in some way to make it extra moist and coconutty?

I think you could add it to either but it would make the cake mix much runnier so you'd need to compensate for this by adding an extra amount of flour. I must say I have used coconut milk in cakes before and noticed no difference, but it might be that my taste buds are rubbish!

You could try adapting this recipe to the amount of ingredients you have? www.guardian.co.uk/lifeandstyle/2007/nov/24/foodanddrink.baking29
