Bean casserole in slow cooker?

DH is keen to make a bean casserole with chunks of chorizo sausage in it. He doesn't cook a lot but is really keen to use the new slow cooker. He says he'll put in tinned tomatoes, chorizo,and 3 different types of tinned beans. I'm worried it will be bland and tasteless. Any ideas what else he could add?

Chorizo is actually pretty salty and garlicky... nice short-cut for adding flavour. Some chopped red peppers works with that combination. Rather than tinned tomatoes, however, use something thicker like passata. Slow-cookers don't get hot enough to boil off excess liquid and some tinned tomatoes can be quite watery.

I make this fairly often but add chilli and garlic as well. Delicious and very cheap Smile
I use passatta and some tomato puree...

Thanks for tips! sounds like passata is a must. like the sound of paprika too.Thought might also tell him to try sundried tomatoes.

onions, herbs - maybe oregano. i often used tinned toms in mine. mix a bit of cornflour with cold water and add if too runny. tom puree if tin of toms would be good.
