Ooh one of my faves is to mix the ricotta with some wilted spinach (frozen is fine) with plenty of S&P (needs a lot of seasoning) and some nutmeg, can also add fried onions and garlic if you cba. use this to stuff ready-made pancakes or cannelloni or for lasagne sheets, then top with a garlic/onion/basil tomato sauce and plenty of grated parmesan/cheddar.

It's nice blended with a tin of tuna (can add sun-dried tomatoes, garlic, whatever you fancy really) and then just stirred through cooked pasta. Fast and easy sauce!

its grey and raining so we had fluffy ricotta pancakes and lakes of maple syrup, thanks for the tips.
