Vegetarian cannelloni recipe, does anyone have one?

What vegetarian filling can i stuff cannelloni with?

I have a lovely tuna and philadelphia dish that I cook sometimes but I need to substitute the tuna with something else...any suggestions?

spinach and tomato is always nice in cannelloni :)

but i would say any vegetable really, peppers, courgette, sweet potato? aubergine etc.

Thanks, I have some baby spinach and an orange pepper in the fridge already. Do I need to do anything to them first? Actually, I have half a courgette which I could grate into the mix too. It's for 6 children who aren't the most adventurous when it comes to food so I need to be a bit subtle Grin

umm i guess you could fry/cook them a bit first, but other than chop them if they are going in the canneloni and in the oven then they will cook anyway? so i wouldnt bother, sometimes i make it more sauce like ie heat the spinach and it goes down in size etc and mix that with chopped toms, garlic, whatever other veg etc all in a frying pan and once its all mixed and softened slightly then i put it in the canelloni :)

I use spinach and ricotta - could substitute the ricotta with the philly?

Jamie Oliver does an AMAZING one. I will see if it's online-it's in the Jamie at home book and is divine (but a faff).
