I'm trying to plan our weekly menus for the new year, but there are lots of constraints.
I have recently given up all nightshade vegetables (potato, tomato, peppers, aubergine etc) and it is having a positive impact on my psoriasis, so i'd like to continue with this but I don't want to cook separately for myself.
Also, its our new years resolution to eat very healthily as a family so I'd like to stick to loads of veggies, no red meat, plenty of fish, low carbs or at least wholegrain rice/pasta, and they have to be reasonably quick to prepare too. Luckily my dcs are not at all fussy and eat most things.
All my old family favourites tend towards tomato based so i really need lots of new ideas for alternatives, any suggestions please?

Thanks slainte- that recipe looks good I'm sure the dcs will like it.
Newyeareverything, frittata would be great but they've often already had eggs for breakfast, scrambled is their top favourite. I know red meat is good in moderation but none of us are particularly keen on it we all prefer chicken and fish.

Sweet chicken curry:

Sweat 1 diced onion and chopped garlic in a little oil for a few minutes. Add 2 chopped chicken breasts and cook until starting to colour, stirring frequently. Add rice for 4, stir and fry for 1-2 minutes. Pour in 1 large cup of apple juice, plus 1 large cup of chicken stock, plus mild chicken curry powder to taste, bring to boil and simmer until rice is cooked, adding more boiling water as needed. Just before serving you can add frozen peas and sweetcorn.

My kids love this and it's tasty enough to please DH too.

Braised chicken thighs - sweat some onions and then anything you have/like (e.g carrots, mushrooms, celery) brown some chicken thighs then chuck in some green lentils add seasoning and thyme and simmer in enough stock to cover until lentils are cooked and chicken tender. Serve with thread noodles added in last couple of mins of cooking or rice.

Or what about cod cooked on bed of sweet potato, courgette, carrot onion and garlic?
