Strip as much meat as possible of caucus.
Use caucus to make stock.
Use to make Risotto or soup. Dependent on taste and amount of meat.

Chicken curry or stir fry with the thigh meat.
Boil carcass for stock if you're feeling particularly virtuous and/or will use the stock. Otherwise just pick as much off as you can (for aforementioned curry or mix with mayonnaise for sandwiches) and then chuck it.
