Need a chicken recipe that will reheat tomorrow?

Have defrosted a whole cut-up chicken ready to bake tonight, and just found out DH can't get home so it will be just DD and me.

The chicken was on its last 'sell by' day when I froze it (cheapo charlie, that's me Grin) so it really does need to be cooked today.

What's a good recipe that I can cook today, refrigerate and serve up tomorrow?

No dairy - can use soy milk but not cheese, cream etc.

I was thinking of something tomato-ey like Spanish chicken but we had spag bol yesterday and I like to vary things a bit! But a bit stuck for ideas. It seems a waste to use a lovely whole chicken for soup...

If you bake the breasts you can shred them into a stir-fry or pasta dish tomorrow night. You could do a chinese or barbeque marinade for the wings/legs then bake tonight and have cold with salad for lunch tomorrow. You could bake all of it and then add the meat to any risotto or casserole dish.

I would probably either make a casserole tonight, which would be fine for tomorrow (coq au vin type thing - always better the day after) or poach it in some water/stock and a bit of white wine. Then take the meat off the bones, chop it up and use it in a risotto or pie?

You could roast the chicken tonight, then take the cooked meat off the bones. I would then use it to make chicken risotto (even better as you've got the bones to make fresh stock for it). Or chicken pasta with herbs, or chicken fried rice, or a chicken salad....
