Have defrosted a whole cut-up chicken ready to bake tonight, and just found out DH can't get home so it will be just DD and me.
The chicken was on its last 'sell by' day when I froze it (cheapo charlie, that's me
) so it really does need to be cooked today.
What's a good recipe that I can cook today, refrigerate and serve up tomorrow?
No dairy - can use soy milk but not cheese, cream etc.
I was thinking of something tomato-ey like Spanish chicken but we had spag bol yesterday and I like to vary things a bit! But a bit stuck for ideas. It seems a waste to use a lovely whole chicken for soup...
