I've made a tea-bread type of loaf cake with pineapple and coconut. I'm worried about it being a bit dry so I'd like to ice the top. Would I be best to use a glace type icing? Or even a drizzle-cake style syrup (can I do that once the cake is cool?)? DH likes butter icing but the top of the cake is a bit wonky so it wouldn't be very even. Help! :)
