A not very good cook needs your help

Hello, I can do basic stuff with potatoes: chips, mash, boil.
I know how to boil pasta.
As for other foods I tend to buy a lot of freezer stuff and tinned.

I would like to get better at cooking and so in an effort I have just been out and bought fresh:

Leeks
Portobello mushrooms (Thought I could maybe top with cheese)
peppers (orange, red and yellow)
real potatoes
tomatoes
cucumber
onions
ham
and I also have some cocktail sausages

In the cupboard I have tinned tomatoes.

I don't want to use them all at once, in one day as that would be silly! but Looking for ideas on recipes/ideas what to do with them all.

Please can you help!

What about a vegetable chilli? If you added a tin of kidney beans. Or actually any kind of beans, it would really pad it out and last a couple of meals.

Leeks, peppers, and mushrooms could all go in. Fry them off with some garlic, and put in a slosh of red wine (or don't bother if you don't have any) and let it simmer for a few minutes. Sling in a tin of chopped tomatoes and some tomato purée (if you've got any). Add a pinch or two of chilli flakes, tsp of cumin, tsp coriander, and a cinnamon stick (all in the herbs and spices bit at the supermarket). Also add a stock cube, and maybe a slosh of Worcester sauce, or marmite, or a square of very dark chocolate (or all of the above). Put in some beans and chopped coriander (neither is essential). Let it bubble away on a lowish heat until you need it. I always think chilli is nicest if left to cook for a while.

Serve with jacket potatoes, tortillas, rice, whatever. Grated cheese and some sort of dip made with natural yoghurt, coriander, and lemon juice on the side.
