Any#one have a sun dried tomato dressing

I have one or two sdts leftover and would love a dressing that would work on couscous/Taboule salady type dish and maybe pasta salad.

I'd just chop 'em up and throw them into a regular oil/vinegar vinaigrette.
Would also use the opil from the jar.

MoonD just in case youcome back to this, I did it tonight and it was/is delic. I whizzed SDt's up, with oil as suggested and then made a vinaigrette as per. Effectively used home-made STD past instead of mustard, added it to vengar with S&P and then Olive oil.

It's totally transformed my cold roasted veg couscous so it tastes totally different to my taboule. Thank you!

Glad it was good cratchit.
I use the oil from sdt and artichokes,peppers and so on as the base for a puttanesca style sauce for pasta-with finely diced celery,olives,capers,chilli and so on.
It is delish-you must be careful though, as the oil burns quickly as it has lots of bits in it.

Great tip thank you! Dh thinks I'm so clever for pulling off the sdt couscous from effectively/store (fridge) cupboard ingedients. Didn't credit you there, just pretended culinary creativity sorry! Think I'll try and wow him again with your pasta idea.
