How do I make a salmon fillet more exciting?

I've got loads in the freezer and am getting bored with wrapping them in foil with a bit of lemon and coriander.

pesto and parmesan or breadcrumbs in foil

harissa and lemon

the children love salmon with thai green or red curry. We cook wholegrain rice, and make some thai curry sauce just with veggies and grill the salmon.
goes surprisingly well.

tandoori salmon - mix a bit of curry powder, paprika, chilli powder, fresh coriander and lemon juice with some natural yogurt, mix together and spread all over the salmon. Leave ot marinade for 2 hours then cook as normal either grill or oven bake. I had it last night, yum!

Heat a roasting tray brushed with oil in a hot oven.

Smear the salmon fillets with pesto and cover with grasted parmesan. Bung them on the very hot tray and bake for 6-8 minutes then turn off the oven and turn on the grill to crisp the top for a minute or so. Really lovely. I serve this with a little bunch of roasted cherry tomatoes on the vine, that I douse with oilve oil and balsamic vinegar, and shove in the oven (low-medium) before the fish goes in for about half an hour, 40 minutes, then whack the oven up just in time for the fish.

Cook some pasta.

Steam some broccoli & the salmon.

Drain pasta & add philidelphia to melt.

Flake the salmon & add to pasta & break up broccoli into small pieces & add to pasta/philli.

Add a blob of pesto & some black pepper - done :)

put a nice homemade curry over it

or our have at the moment is a creamy peppercorn sauce over it with baby pots and lots of veg Grin

Also second what others have said - that salmon done in a Teriyaki marinade them roasted or barbecued is fantastic. Had it at Alouiseg's house once and it was seriously yummy. I tried to replicate it myself without having the recipe, and I remembered it tasted very rich and slightly sweet so I used a mixture of soy sauce and teriyaki sauce, and added a bit of soft brown sugar. Soaked it for a hour or two, then my DH just stuck it on the barbecue hotplate wrapped in foil. It was really really good.

For absolutely super quick, squeeze a small amount of sweet chilli sauce over each fillet and grill for 10 mins - Delish
