Can I make some kind of one pot bake/casserole from the following...

A couple of chicken breasts, a packet of smoked bacon lardons, 1 leek, about 4 chestnut mushrooms.

Trying to use up fridge/freezer contents. Have got onions/white wine/chicken stock if necessary, just not entirely sure how to go about it?!

finely chop the leek, mushrooms and an onion, saute with the lardons

deglaze pan with some of the white wine, add in the chicken breasts, some chicken stock.

S&P, thicken with cornflour, serve with whatever you like really

You could keep the liquid down and slice the chicken and use it as a pie filling if you wanted to make or had pastry,

Use milk and flour to make a White sauce, fry the lardons and chicken and then pastry crust on top. That's what we are having for dinner later Grin

Absolutely! How many is it to feed?

If it were me, I would cut the chicken breasts into two or three pieces each. If they have skin on I would dust with a little flour, brown briefly in pan / casserole with a little oil/butter. Add chopped leek and onions. Couple of garlic cloves if you have them. Stir briefly then splash in some white wine. Add chicken stock to cover, add chopped mushrooms. Salt and pepper depending on how salty your stock is. Put lid on casserole and either slow simmer on hob or pop in oven at 180 C for 40 mins.

Oh yes, forgot the yummy lardons. Add at same time as onions and leeks.

Was a great success!

Kind of did a hybrid of everyone's suggestions.

Leeks, onion, garlic and lardons softened, took out of pan, coloured chicken breasts, de-glazed with white wine, added plain flour to leek/onion mixture, added to chicken, added mushrooms, added some whole milk, a chicken stock cube, thyme, celery salt and pepper, shoved in oven for 40 mins, served with croquette potatoes (random I know but again they were in the freezer)

Divine! Oh and it would have made a perfect pie filling.
