Help! What can I use instead of golden syrup in a cake recipe?

Help! Am just about to start making a cake for tomorrow and have realised I don't have enough golden syrup - recipe calls for 4 tbsp, I probably have about 2. Do you think I can use brown sugar instead?

Depends how integral the syrup is to the flavour I guess - how about honey?

Most corner shops would sell golden syrup though - I'd try and get some rather than potentially ruin the cake

"Golden Syrup is much sweeter than normal table sugar. As a thumb rule, in case you are using 1kg of table sugar for a recipe, you use only 750 gm of Golden Syrup as a replacement. The extra sweetness is on account of its fructose fraction, which not only imparts more sweetness to it but also renders the product more health friendly!"

So you could use 4tbs of sugar (= 3 of syrup), plus 1 of syrup (I think that works out?)?

That's brilliant - thanks so much Smile. Would have popped out MrsCB, but have 5 girls in the house, it's pouring with rain and DH has gone out. Managed to eke out 3.5 tbsps from my squeezy bottle of syrup, so have just put an extra tbsp of brown sugar in. Hope it works! Thanks for your help.

Sounds yummy - what cake is it? And I totally get the not going out thing - I'd have done the same.

It's fab - easy and keeps for ages. It's my friend's recipe (that I think she got from her mum). I made it in a star shape as a child-friendly Christmas cake and have made one today for a party we're having tomorrow. I'll put a photo on my profile. Here's the recipe:

Chocolate Yogurt Cake

150ml vegetable oil
150ml yogurt
4 tbpsp golden syrup
170g caster sugar
3 eggs

225g s/r flour
3 tbsps cocoa powder
1/2 tsp bicarbonate of soda
1/2 tsp salt

Pre-heat oven to 160C
Place oil, yogurt, golden syrup, sugar and eggs in a bowl and beat.

Sift in flour, cocoa, bicarb and salt and beat/

Pour into greased and lined tin and bake for up to an hour depending on the size of your tin. My star shaped one takes about 35 minutes (it's quite big, so the cake isn't that deep).

I forgot to say, I used a Jamie recipe for the icing - a mix of chocolate, cream, butter and icing sugar...will find the recipe for that if you would like it Smile.
