Not cooking our turkey til Boxing Day - should I do my ham/gammon ...

... today, tomorrow or Monday. I usually cook it on Christmas Eve to eat Christmas Day but we will be away tomorrow so I won't be able to do it then. Unless I do it tomorrow night which means I'd be up half the night - which I don't want to be. If I leave it til Boxing Day morning, it takes up more hotplate and oven space ... and it's another thing to do. I know it will keep for what, 5 days odd, but I guess if I do it today I lose two days of it's life. Someone decide for me please!! I'm leaning towards tomorrow night as I type!

Yes do it today -it'll improve the flavour. I'm doing mine today and we'll still be eating it Monday and Tuesday!
