Please help. Desperate for the lime sorbet recipe. My brother was meant to email it to me and now he's on holiday and I need it for this weekend.

I cleaned out this room at the weekend and it is in the loft

Here:

Serves 4-6
750ml water
350g golden caster sugar
juice and finely grated zest of 5 limes
250g mascapone

Put sugar and water in a saucepan and bring to the boil, stir in the lime zest and marscapone and set aside to cool. Scrape into a metal or plastic container and put in the freezer or ice-cream maker.

If useing freezer after 2 hrs remove sorbet and beat firmly, bringing frozen edges into the middle. Return the the freezer for a further hour, repeat and freeze again. It will look dodgy don't worry. When it looks on its way to being frozen give it a final beating. Put it in the fridge 15-20mins before you serve it.
