Is it ok to make curry the day before it's to be eaten?

Is curry like chilli, nicer the next day after the flavours have soaked a bit? or if I make a curry tomorrow for a buffet on Christmas Eve, will I poison everyone and ruin christmas for 2 entire families? Blush

yes absolutely, i would keep curry for around 4 days in the fridge quite happily. Flavours def improve.

It's absolutely fine, so long as you reheat it very thoroughly until piping hot. And as others have said the flavours will be better!

When you reheat it, add in a big knob (fnar) of butter and a teaspoon of garam masala, stir in and then sprinkle with fresh coriander.
