Quick question re cake cooking time - cake in the oven!

The recipe says 2 x 8 inch tins, take 30-35 mins. I've only got the one 8 inch tin, so have put it all in that (it's just a delia sponge cake recipe). Anyone know how much longer it might take? Thanks!

Blimey - I hope it's a deep tin!!

I would say maybe give it a total of maybe 45mins-1hr and lower the temperature slightly.

Check after 45 mins with a skewer and assuming it's still a bit squidgy (it probably will be), check again after an hour.

That's just my guess though. My oven runs hot and dry so that would probably do, but yours may be different.

Cook for 30 mins, remove from oven, skewer test.

If skewer = cake mix, cook for further 5-10 minutes then repeat test.

If skewer = clean, remove from oven and cool.

When I say "slightly" I mean take it down to perhaps 180 from 200 (assuming you're baking at 200?)

If its a deep tin (like for a fruit cake) try baking for 50 mins, and testing. If the outside is cooked but still loose in the middle cover with a seet of folded newspaper or a flat baking tray, lower the oven by 10 degress (its should be on about 155 now) and pop in an oven-proof bowl of water on the lower shelf. HTH

Result! 45 mins was perfect, very happy dh and dcs (impromptu early birthday cake).
